This is because of Brook’s devil fruit that makes it quite difficult for anyone to kill him. Brook had once already died in the story but he was brought back to life by his devil fruit Yomi Yomi no Mi. The Yomi Yomi no Mi is Devil Fruit type Paramecia that strengthens the soul of individuals who consume it to the extent that the user can employ other soul-based powers and come back to life after dying once.

Therefore, in this potential ending, in their quest to find the One Piece and achieve their individual goals, all of the Straw Hat Pirates die except Brook who lives to tell the tale of their brave crewmates. It is truly an emotional ending.
